On the nose
Fresh and fruit-driven with lovely kaffir line and mandarin, plus added complexity with hints of almond and apricot.
On the palate
Powerful line and citus with long natural acidity
Product Notes
Fruit is harvested, de-stemmed, crushed and gently pressed at night. This results in a fine free-run cut and pressings component, with all batched kept separately in stainless steel tanks. The free-run juice is chilled to preserve fruit's vineyard expression and purity. Once the liquid has settled, it is racked off solids and seeded with yeast. A cool ferment is carried out over 10-14 days before chilled and filtered before bottling.
