With a practical approach, the vineyard’s philosophy focuses around healthy and alive soil, which involves no use of synthetic herbicides or fungicides, use of compost and biodynamic preparations, use of sheep in winter to graze under vine and minimal mechanical soil disruption.

On the nose
A mix of spicy dark raspberry and dark cherry fruits are trailed by liquorice, light scorched earth notes and pepper.
On the palate
Flashes of liquorice, scorched earth and spicy pepper sit underneath. Stern yet fleshy in its mouthfeel with a lightly peppered aftertaste that’s medium to long.
Product Notes
Hand-picked, mechanically sorted. 50% whole berries. The remaining berries were crushed. Cold soak for 5-6 days. Wild, open Fermentation. Extended maceration in stainless steel tank. No pressings were used. The wine was kept in 100% older French oak: no fining, just filtration.
