On the nose
The nose is lifted, complex and earthy comprising of mushroom, licorice and black olive. There is loads of blackberry, plum and blackcurrent.
On the palate
These aromas are supported on the palate by red berries, plums and chocolate. Soft, even tannins are balanced perfectly by fresh acidity and a fine bead. Powdery dark chocolate dominates the back palate adding great length and a dry finish.
Product Notes
A homage to the Northern Rhone with 3% Viognier, this sparkling shiraz is fermented on viognier skins, with most of the juice cold fermented. The base wine is then basket pressed to 1/3 new and 2/3 old oak with 25 months maturation.
