Ashton Hills is a three-hectare, dry-grown vineyard that lies in the Piccadilly Valley sub-region of the Adelaide Hills, on a ridge just below the summit of Mount Lofty. It has built a reputation as one of Australia’s finest proponents of Pinot Noir and cool climate whites.

Tasting Notes

When to drink
Encourage cellaring for up to 5 years
On the nose
Lifted fresh red and black fruits, layered with autumnal notes and spice from whole bunch fermentation.
On the palate
Juicy and red fruits, with a plush and supple palate. There is a hint of spice, fresh herbs from the whole bunch component and the mouthwatering natural acidity and fine tannins result in a textural and long finish.
Product Notes
Some whole bunch fruit (40%) was added to ferments, enhancing aromatics and structural complexity. Fermentation was initiated by indigenous yeast (wild ferment). All barrels were kept on lees to build palate, body and complexity. They were racked and blended just before bottling.
